| ALU LACHCHE, POTATO STRAWS |

Ingredients
half 4 large potatoes
ice cold water
oil for frying
1 teaspoon salt
half teaspoon chili powder
half teaspoon ground cumin
half teaspoon curry powder

Method
Peel potatoes and cut into thin slices, then cut slices in matchstick strips. Soak in ice cold water, then drain and dry on on paper towels. Heat oil until very hot and fry the potato straws a handful at a time, until they are crisp and golden. Lift out of with a perforated spoon and drain well on absorbent paper. When they are all fried sprinkle with the salt and spices mixed together.
