Method
Make cakes according to directions on packet, divide mixture between greased deep 23cm (9in) square cake tin and greased deep 20cm (Bin) round cake tin, making sure mixture is the same depth in each tin, bake in moderate oven 1 hour for round cake, 1 ј hours for square or until cooked when tested. Turn cakes on to wire rack to cool.
With a sharp knife, cut out a deep rectangle from one end of square cake, as shown; do not cut right through cake, leave 4cm (1 1/2 in) border all round. Assemble cakes, as shown, on prepared board; if necessary, insert long wooden skewers through centre of square cake into round cake to hold firm. Tint Vienna Cream pink with a few drops red food coloring, ice round cake with Vienna Cream; spread sufficient Vienna Cream on square cake for backdrop picture to adhere. Choose a card or picture with a pretty scene, position on square cake, as shown.
Place rest of Vienna Cream in piping bag fitted with a small star saped tube; pipe small bands of stars around top and bottom edges of round cake, pipe a decorative pattern around side of cake, decorate with gold cachous and flowers, as shown. Arrange dancers on top of cake, position candle holders between dancers, cut candles in half, insert in candle holders, preferably at the front to represent footlights, place cachous around candles; fill rest of holders with flowers. Make curtain; if necessary, sew a running thread through top of each curtain drop to gather slightly. Position on cake, as shown, secure with a little Vienna Cream

For a simpler cake, the back can be omitted and a cake made of the stage only. For this, only two packets of cake mix are required. Pour them into a deep 23cm (9in) round cake tin, bake in moderate oven 1/~ hours or until cooked when tested. You will still need two quantities of Vienna Cream.
Note: Several types of ballerina dolls are available from most cake shops and shops which specialize in cake decorating equipment.
