              Chicken and Egg Fried Rice POSTED ON : 1/20/2002
Ingredients

3 glasses plain half boiled basmati rice 3tbs Olive Oil 2 large onions finely chopped 1 large red and green pepper finely chopped 2.5lbs boneless chicken cut into 2 inch cubes 4-5 garlic cloves crushed 4tbs mild curry paste 1tsp paprika 0.5 tsp turmeric 4 beaten eggs salt and pepper to taste

Method

1. Spread out the half cooked rice grains on a tray and leave to cool. 2. Heat a wok until hot and add two tbs of oil and swirl it around. Add the onion and peppers and stir fry for one minute. 3. Add the chicken cubes, garlic, curry paste and spices and stir fry for 2-3 minutes. 4. Pour 1 glass water and simmer for approx 30 mins on low heat or until water evaporates. Add seasoning and rice. Stir fry for 2-3 minutes until the rice is very hot. 5. Make a well in the centre of the rice and add the remaining oil. When hot, add beaten eggs and leave to cook for 2-3 minutes, then stir into rice. 6. Serve at once.
