Ingredients

2 packets butter cake mix 1-tablespoon instant coffee powder 1 tablespoon boiling water 1 1/2 quantities Vienna Cream 60g (2oz) dark chocolate green food coloring Coconut Ping pong ball red nail polish Black felt-tipped pen 1 board 50cm x 25cm (2Oin x 10in) Make cakes according to directions


Method

on packet, divide evenly and pour into two 28cm x 18cm (11 in 7 un) greased lamington tins, bake in moderate oven 30 minutes or until cooked when tested. Turn on to wire rack to cool. Trim both cakes all round. Cut cakes, as shown in first picture; the two center pieces form the bat. From one remaining piece of cake, cut a wedge approximately 25cm (10 in) long. Assemble cake on prepared board, as shown, with long wedge positioned down center of bat. Taper off ends of wedge, as shown, to give bat a slightly raised effect in the center. Dissolve coffee powder in boiling water., cool; add to Vienna Cream, beat until smooth. Spread cake completely with coffee Vienna Cream, mark shape of handle, cover handle with grated chocolate. Cover the board with green-tinted coconut. Ping pong ball painted red and marked with black stitching repre-sents the cricket ball.
