French beans 100 gms. Carrot 1 no. Onion 1 no. Capsicums 2 nos. Cornflour 1 tbsp. Soya sauce 1 tbsp. Brown sugar 4 tbsps. Vegetable stock 3/4 cup Water 1Ѕ cups Vinegar 4 tbsps. Salt To taste

MANCHOW SOUP

Cooked prawns, finely chopped ј cup Cooked chicken pieces ј cup Chicken stock 4 cups Ginger, finely chopped 1 tsp. Garlic, finely chopped 1 Ѕ tsp. Green chilies, finely chopped 1 tsp. Coriander leaves,finely chopped 1 tbsp. French beans, finely chopped 2 Ѕ tbsps. Carrots, finely chopped 2 Ѕ tbsps. Cabbage, finely chopped 2 Ѕ tbsps. Capsicum, finely chopped 2 Ѕ tbsps. Mushrooms, finely chopped 2 Ѕ tbsps. Spring onions, finely chopped 2 Ѕ tbsps. Pepper ј tsp. Ajinomoto As required Soy sauce 1 tbsp. Cornflour mixed with 1 cup water 4 tbsps. Spring onion stems 2 nos. Oil 3 tbsps. Salt As required

LUNG FUNG SOUP

Spring onions, round slices ј cup Bean sprouts ј cup Mushrooms, minced ј cup Water chestnuts, minced ј cup Cabbage, minced ј cup French Beans, minced 2 tbsps. Carrot, minced 2 tbsps. Cauliflower, minced 2 tbsps. Capsicum, minced 1 tbsp. Chicken, shredded finely ј cup Cooked prawns, minced ј cup Cooked pork, minced ј cup Ajinomoto A pinch White pepper 1 tsp. Chicken stock 4 cups Soya sauce 1 tbsp. Sugar 1 tsp. Cornflour mixed with water 4 tbsps. Eggs 2 nos. Oil 3 tbsps. Salt To taste For garnishing Spring onions, chopped 2 tbsps. Pineapples, cubed 2 tbsps.

WON TON SOUP

For the Won Ton Egg 1 no. Plain flour 2 cups Salt To taste For the soup Chicken stock 3 3/4 cups Chicken, cooked and chopped into pieces 1 cup Spring onion, for snipped green top A Few Spring onions, finely chopped 2 nos. Won ton 8 nos. Egg, white 1 no. Prawns, peeled 1 cup Salt and pepper To taste

Barbecued Lamb on Skewers

2 lb Stewing lamb, cut in
1 ј” cubes
4 tb Fresh lemon juice
3 Cloves garlic, minced
1 tb Hot chili oil (or Ѕ ts Cayenne and 1 tb Salad oil)
ј ts Salt
1 pn Sugar

Tori no mizutaki (chicken stew)

1 lb chicken drumsticks chopped into 1-inch pieces (Use cleaver or heavy knife)
1 lb tofu, pressed and drained, cut into 1-inch pieces
1 bundle watercress
1 Chinese cabbage, cut into 2-inch pieces
2 cups shirataki (or substitute bean vermicelli, available at your nearest Chinese grocery store)
2 cups spring onions, cut into 2-inch pieces
1 cup carrots, thinly sliced diagonally
8 dried shiitake mushrooms, soaked in water (Keep this water.)
Ѕ inch x 6 inch kombu seaweed, or
2 tsp. dashi powder (not for purists)
Dipping sauce
1 cup Kikkoman soy sauce
Ѕ cup rice vinegar
