| Ginger Ice Cream |

Ingredients
1 quart vanilla ice cream , 1/2 cup candied or crystallized ginger -- finely diced , 1 1/2 teaspoons fresh ginger juice and pulp -- pressed or minced , toasted coconut or nuts for garnish -- chopped

Method
1. Place ice cream in mixing bowl. Allow to soften slightly. Fold in candied ginger, ginger juice, and pulp. , 2. Spoon mixture into freezer carton. Place plastic wrap directly on ice cream, then replace carton cover. Store in freezer for 2 to 4 days to develop flavor. , 3. Serve with garnish, if desired. , * Timesaver Tip: Ice cream should be prepared several days in advance to develop flavor.
