1/2 kg mutton 4 hard-boiled eggs ghee 2 (100 g) onions, chopped fine 2 (150 g) tomatoes, chopped salt to taste tamarind pulp and lemon juice asrequired a few sprigs mint leaves for garnish Grind for the masala paste: 1/2 tsp (2 g) cumin seeds 1/2 tsp (2 g) turmeric powder 1/2 tsp (2 g) coriander seeds 1/2 tsp (2 g) saunf (fennel seeds) 6 peppercorns 2.5 cm cinnamon 2 cardamom 2 cloves 3 green chillies 2.5 cm ginger 6 flakes (12 g) garlic Grind for the green chutney: 1/2 bunch coriander leaves 1/4 bunch mint leaves

BOILED LEG OF MUTTON WITH CAPER SAUCE

Leg of Mutton Joint 4 Carrots 6 Medium Onions (1 studded with cloves) 4 Sticks of Celery Bouquet Garni 2 Cloves Garlic

500gms lamb 5 onions medium size 400gms tomato 20gms ginger 20gms garlic puree 1 large cardamon 4 green cardamons 1 cinnamon 4 cloves 4 black peppercorn 1 mace 1tsp coriander powder salt & red chillies to taste

Beef finger rolls

1lb-mince beef 1 medium onion (finely diced) 1 medium tomato(seedless finely diced) 1/2 tsp crushed ginger and garlic 1 tbsp bay leaf and cumin seeds powder 1/3 tsp baking powder

Beef Tikka

1/2 kilo cubes of beef 2 tbs unripe papaya (grinded) 1/2 tsp ginger paste 1/2 tsp garlic paste Salt according to taste 2 tbs yogurt 1 tsp chili powder OR 1tbs chopped green chilies

Bhuna Qeema

1/2 kg qeema 4 medium onions (sliced) 4 tsp garlic paste 1 tsp ginger paste 1 tsp turmeric 2 tsp coriander (ground) 3/4 tsp salt 3/4 tsp chilly powder 1 tablespoon oil green chilies & coriander (for decoration)

Haleem

1 kg boneless beef 2tbsp ginger garlic paste 3 medium onions 2tbsp chilli powder 1tsp haldi 300ml oil2tbsp salt 2tbsp garam masala powder Half cup channa dal Half cup mash dal half cup masoor dal Half cup rice 1cup wheat

Namak Mirch Keema

2 lb. ground beef 2 tbsp. ginger paste 2 tbsp. garlic paste salt to taste 1 lemon 2 tbsp. yogurt 2 tbsp. ground red pepper 1 tbsp. chili powder 3 green chilies 1 bunch of cilantro

Shami Kabab

Boneless beef 1 kg, channa daal 1/2 cup, cinnamon stick 1, large black cardamom 1, whole black peppers 8, dried red chilies whole 10, medium onion 1,ginger 1'' piece, garlic 6 cloves. Garnish: onions 2 small cubes/chopped, coriander leaves, green chilies, mint leaves. Egg 1 or 2(optional)

Tandoori Chicken

6 pieces Thawed chicken skinned 2 tsp Ground Coriander 2 tsp Masala (Tandoori paste is available) to taste Red pepper powder
