Method
Make cakes according to directions
on packet, divide evenly between two
greased 28cm x 18cm (llin x 7in)
lamington tins, bake in moderate oven
30 minutes or until cooked when tested. Turn on to wire racks to cool.
Place cakes side by side, trim long sides so the two cakes fit tightly together. Trace patterns on to grease-proof paper, cut out, pin on top of cakes, as shown, with a small sharp serrated knife, cut out cake using pat-tern as guide. Assemble on board.
Tint half Vienna Cream with green food colouring, tint other half with apricot food colouring, ice hat and boots with green Vienna Cream, as shown, ice rest of cake with apricot Vienna Cream, as shown. Outline cake and define leg with thin licorice strips, as shown; split tubular licorice length-wise, press out flat, cut nose and paw pads from licorice, position. as shown:
cut whiskers, eyebrows, mouth and claws out of thin licorice strips, place in position. Round green sweets rep-resent eyes, halved glace cherry rep-resents tongue, whole glace cherry secured with toothpick to tip of hat represents pompom.
