Method
Royal Icing: Beat egg white lightly, add the sifted icing sugar, one dessertspoon at a time; beat well after each addition until icing forms peaks.
Cake: Make the cake according to directions on packet. Spoon evenly into greased 28cm x 18cm (llin x 7in) lamington tin, bake in moderate oven 30 to 35 minutes or until cooked when tested. Turn on to wire rack to cool. Tint Vienna Cream with a few drops of green food colouring, ice cake evenly, cover with green-tinted coconut. Mark the lines on the cake with ruler. Mark the circle and half circles with scone cutter. Spoon the Royal Icing into one corner of a small paper bag (see page 4). Pipe lines in grooves on cake, as shown. Pipe triangles of Royal Icing on a small round red sweet to represent the soccer ball; place on cake.
Make goal posts from white pipecleaners, insert in cake, twist into shape, as shown. Cut piece of cotton net (or bag used for onions) to fit over posts, as shown. Make crosspieces for goal posts from small pieces of pipecleaner, thread net on to pipecleaner, position on posts, as shown, twist ends under to secure. In-sert small piece pipecleaner in cake as a peg to hold net in place; coconut will hold sides of net down. Make flags from licorice allsorts (see page 3).
