              Steamed Lobster ( Originally from Shangai, serve with steamed jasmine rice and wok-fried greens. Ser POSTED ON : 11/27/2002
Ingredients

1Kg/ 2.2 lb fresh lobster meat 1 Egg white, slightly beaten 2 Garlic cloves, finely chopped 1 tsp corn oil Garnish: Red bell pepper, spring onion, juliene, and coriander leaves.

Method

Cut lobster meat into bite size pieces. Marinate the meat with beaten egg white, pinch of salt, and garlic for five minutes. Place the lobster mix on a plate that will fit into your steamer basket and cover with a lid. Cook over a steam bath for approximately 7 minutes. Remove from the basket and check that the meat is cooked firm, glaze with hot corn oil, sprinkle the garnish over the top of the lobster and serve.
